With regard to meat or fish that arrives frozen at Alimentari Radice S.r.l.’s Speciality Division, the company has an appropriate thawing process in place. The thawing process is another of Alimentari Radice S.r.l.’s strong points, there is a totally computerised room which ensures the frozen raw material is gently and gradually thawed by means of slowly and gradually increasing the temperature so that the organoleptic properties of the raw material remain unchanged. Once thawed and placed on the special trays, the raw material is washed of the whey formed by water spray nozzles placed above it. This entire stage is controlled by anomaly and temperature detectors (probes) both inside the raw material and in the department.
