DE-MOULDING

Once the product has been suitably cooled, crucial in achieving the right firmness and stability of the meat slices, it then moves to the de-moulding stage. The machine which extracts the product from the mould is completely automatic. Next, the de-moulded product is manually trimmed and sent through the conveyor belt to the next stage, which is packaging.
